Six Sigma 2005 Sauvignon Blanc
Lake County

This delicate, fruity wine displays the best of the Sauvignon Blanc variety. Ripe aromas of Meyer lemons, pink grapefruit, and fresh herbs complement the fruit flavors of gooseberry, peaches and pears. It has a refreshing crisp acidity, mineral, with good balance and volume in the finish. Nice clean, long aftertaste. The high quality reflects the careful handling of the grapes, the juice and the wine in a reductive (without oxygen) environment, a technique that ensures a crisp and fresh wine, preserves fruit aromas and blocks out the too distinct grassy taste notes often associated with Sauvignon Blanc.

This Sauvignon Blanc comes from ROOSTER VINEYARD, Lake County appellation. The grapes were handpicked before sunrise on September 29, 2005 in bins with a bed of dry ice at the bottom. During the short drive to our winery, the dry ice provided a cool blanket of carbon dioxide blocking out oxygen and creating a reductive environment in the lid-covered bins.
